Konkani Phansachi Bhaji

Jackfruit cooked in Konkani fashion with grated coconut and goda masala is a unique experience you should not miss out on!
Ingredients

Ready-to-cook jackfruit shreds
- 3-4 Tbsp groundnut oil
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- A generous pinch of strong heeng
- 1/2 tsp turmeric powder
- 8-10 curry leaves
- 2 Tbsp peanuts
- 2 tsp Jaggery/ more to taste
- 1- 2 Tbsp Goda Masala (every family's Goda masala is different, start with 1 Tbsp, taste and add more if needed)
- 1 tsp red chili powder/ more to taste
- Salt, to taste
- 1/3 cup freshly grated coconut
- 3 Tbsp coriander, finely chopped.
Directions
Heat oil in a Kadhai. Temper with mustard seeds, cumin seeds, heeng, turmeric and curry leaves. Now set aside half of this tempering in a small bowl.
To the remaining tempering in the kadhai, add peanuts and stir around till they are well roasted.
Tip in the jackfruit followed by the jaggery, red chili powder, goda masala and salt. Mix well so everything is coated well in oil. If the mixture seems a little dry at this point, add a some water.
Cover and cook for about 8-10 mins, till all the flavours combine.
Now add the coconut and cook for another 2-3 mins.
- Garnish with coriander and turn off the flame.
- Now drizzle the tempering we had set aside, and serve.
