Jackfruit (Kathal) Galouti Kebabs
Kathal Ke Kebab is an Awadhi delight and simple to cook, barring the sourcing and cleaning of tender raw jackfruit - but you don't need to worry about that with our ready-to-cook jackfruit. These melt-in-your-mouth kebabs are super tasty & healthy, making for a great party snack!
Ready-to-cook jackfruit shreds
- ½ cup Besan
- 2 Tbsp Ghee/ Oil
- ½ tsp Ghee/ oil
- 1 tsp amchoor powder
- Salt, to taste
- 1 inch Ginger
- 4 cloves of Garlic
- 5-6 Coriander stems
- 1 Green chili
- ¼ tsp Turmeric powder
- 1 tsp Red chili powder
- 1 tsp Coriander powder
- ½ tsp Cumin Powder
- ½ tsp saunf powder
- ½ tsp garam masala
- Pinch of Nutmeg
Empty the jackfruit pack in a large mixing bowl
In a pan, combine the besan and ghee/oil, and over medium heat, roast till fragrant. Add this to the jackfruit.
Grind all the ingredients for Wet Masala to a coarse paste and fry it in ½ tsp ghee/oil until the raw smell disappears
Add all ingredients listed under Dry Masala to the fried paste and cook for a minute.
Now add this to the bowl with jackfruit & besan. Add salt and amchoor powder. Mix well to combine, kneading to break up the larger jackfruit pieces.
Shape into bite-sized Kebabs and shallow fry until golden brown
